Tis’ quite the feat to solely use
Local, sustainable and ethically sourced produce
When you are catering for the masses, but there is no doubt it is worth the effort.
Here at Pickle Shack we will source at least 80% of our ingredients from within a 10 mile radius of your venue (or from within 10 miles of our preparation kitchen, whichever allows for fewer food miles).
The other 20% goes on a few store-cupboard essentials that can’t be sourced locally: Chocolate, coffee, spices and the odd lemon are the main culprits. It is important to us that, even though these items are from further afield, they must come from ethical and sustainable roots.
Designing a menu
Abundant with fresh local loveliness
Is our measure of success. Because of that, we aren’t content with just upholding our Produce Promise, we want to improve on it too. So, in 2016, we introduced Pickle Shack Creative Days.
We set aside five Creative Days each year whereby the kitchen team crank their creativity up yet another notch and begin to experiment with completely new techniques and flavour combinations. The goal of our Creative Days is to find local alternatives for ingredients that we would traditionally have to import, as well as furthering our commitment of our Produce Promise.
So here it is: We will continue to use as much as we possibly can from our local suppliers of the West Country. This includes meat, fish, vegetables, fruits and the amazing wild ingredients that can be foraged from our hedgerows and fields. As for the goods that can’t be sourced locally, we promise to consider if these ingredients are integral to the menu, and if they are, we will source them ethically and responsibly.
