Strawberries are a quintessential summer fruit that are delicious on their own or with just about anything sweet!

This recipe takes strawberries on a slightly different journey and gives them a happy home with salty foods like cheese and cured meats.

We use a fresh pickle recipe which we find retains the most strawberry flavour but the downside is that it won’t last as long as a straight up pickle. Its never been a problem for us though as they get snaffled up pretty quick.

The basic principles of this recipe can be used for pretty much anything- try substituting the strawberries for carrots, cucumbers, gooseberries, beetroots or whatever you have in your garden and feel free to change the flavourings to suit your ingredients. Cumin and coriander seed work great with carrots, but just play around and have fun!
